The menu

Three snacks, friedthe morning you get them.

We make mandazis, samosas and chipettes, and nothing else. A short menu is what allows one cook to hand-make every piece in a single morning and still get the boxes out warm.

Everything below is sold inside the three boxes on the packages page rather than as loose items, because a box is what fits the delivery loop. Choose the box that matches your table and the counts take care of themselves.

    Fluffy Mandazis

    Sold in boxes of four, ten or thirty

    Our mandazis are mixed with coconut milk and cardamom, proofed by touch rather than a timer, cut into the traditional triangle and fried until the outside is golden and the inside stays airy. They are lightly sweet, so they work with morning tea and with a savory samosa on the same plate. Eat them the day they arrive; they are built for that day.

    Hand-Folded Samosas

    Sold in boxes of three, six or twenty

    Each samosa is folded individually from pastry cut in our kitchen and sealed with flour paste, never crimped by machine, so the corners hold and the filling stays inside. Onion, ginger, garlic, cumin and coriander carry the flavour, with mild, medium and hot built as three separate fillings. Hot orders travel with a small pot of pili pili on the side.

    Signature Chipettes

    Sold as large portions, one to six per box

    Chipettes are plantain sliced thin, fried until the edges darken while the centre keeps a slight chew, then salted while the oil is still on the surface. Sweet and savoury at once, they hold their texture longer than anything else we make, which is why they anchor every box. Nobody orders them first and almost everybody adds them second.

How to read the menu

Counts, spice and timing

Every box lists exact counts, so you always know how many pieces are arriving rather than a weight in ounces. Spice level applies only to samosas and is chosen once per order at checkout, which keeps a mixed table workable: mandazis and chipettes are never spiced.

What we will not make

We do not make gluten-free mandazis, because the dough depends on wheat and this kitchen cannot promise a separate fryer. We do not sell day-old stock at a discount, because there is no day-old stock. And we do not ship, because a box in a courier network arrives as something other than what left here.
